5th Edition: The Provenance Dinner

On October 30, 2025, Ikk Panjab hosted its most ambitious chapter yet — The Provenance Dinner, the fifth edition of The Heritage Gathering.

Conceptualised as a culinary time travel, the evening traced the journey of Punjabi cuisine — from the hearths of the Indus Valley Civilisation to the vibrant plates of today. Guided by Dr. Kurush Dalal, food historian and anthropologist, guests were taken through a six-course sit-down silver service dinner, each course paired with a signature cocktail crafted to echo its flavours and stories.

The experience unfolded as more than just a meal — it was theatre, memory, and history told through taste. Every plate held a narrative of migration, trade, and transformation; every pairing a reflection of Punjab’s evolving palate.

Behind the scenes, weeks of experimentation, tastings, and rehearsals brought this vision to life. The Ikk Panjab team — from kitchen to floor — worked with remarkable passion and precision, ensuring that every guest not only dined, but felt connected to a deeper story of culture and craft.
